“I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout so big the malt was coming out of the top of the mash tun. After fermentation we brought in some bourbon barrels to age the stout. One hundred and fifty days later, Bourbon County Stout was born: a liquid as dark and dense as a black hole with a thick foam the color of bourbon barrels. The nose is a mix of charred oak, vanilla,carmel and smoke. One sip has more flavor than your average case of beer. It overpowers anything in the room. People have even said that it’s a great cigar beer, but I haven’t yet tried a cigar that would stand up to it.” - Brewmaster Greg Hall

Oak barrel-aged for to develop complex richness, soft tannins, and fruity tart character. Then, blended with young beer to create the desired balance of malt sweetness with a dry finish.

Igor Sikorsky, at the age of 50, realized his dream of 30 years with the successful lift-off of the first practical helicopter in Stratford, Connecticut in 1939. This beer was made in his honor with with rye and aged in oak whiskey barrels.

Happy birthday to Westbrook! Brewed to celebrate their first year as a brewery, this imperial stout was aged on cocoa nibs, vanilla beans, cinnamon sticks, and fresh habanero peppers.

Style: American Wild/Sour Ale
A blend of two beers: one aged in oak and fermented with 100% brettanomyces + another fermented in stainless with a blend of two belgian yeast strains. Both beers were brewed with a combination of 2 row and wheat malt in addition to specialty grains. Hopped with Hallertau, Styrian Goldings and Cascade hops. Dark golden in color with citrus, pineapple and bread in the aroma. Tart with notes of citrus and breadcrust.
